His cuisine is a subtle blend of produce from the Ardèche to which the Teyssier family is very attached plus a fond glance at his roots in South Western France and those of the Scandinavian camp-site director.
His globe-trotting enriches the summertime theme evenings – in particular on Thursdays.
A good example of a theme is “vintage” (with Kentucky farm chicken).
